You pull open a can of Spam, expecting to see the familiar pink block of meat, but instead you notice it surrounded by a layer of clear, gelatin-like substance. Instantly, a question pops into your mind: “Is this normal, or has it spoiled?”

The good news is that in most cases, the clear jelly found inside a can of Spam is completely normal. In fact, it’s a natural part of the product and not usually a sign that anything has gone wrong.

What Is the Clear Jelly in Spam?

The transparent or slightly cloudy jelly found in canned meats like Spam is primarily made from:

  • Natural meat juices
  • Gelatin from proteins
  • Water
  • Salt and seasonings
  • Rendered fats

During the cooking and canning process, these ingredients heat up and mix together. As the product cools, some of the proteins and collagen naturally solidify into a gel-like substance.

This is very similar to what happens when homemade broth is refrigerated and turns into jelly.

Why Does Spam Contain Jelly?

Spam is fully cooked inside its sealed can under high heat and pressure. This process serves two important purposes:

  1. It cooks the meat thoroughly.
  2. It sterilizes the contents for long shelf life.

As the meat cooks, it releases juices and proteins. When cooled, those proteins can form the clear jelly you see in the can.
