Instructions

2. Make the Custard Filling

  1. In a medium saucepan, combine the milk and heavy cream. Heat over medium heat until it’s warm but not boiling (about 180°F or when small bubbles form along the edges).
  2. In a large bowl, whisk together the sugar, eggs, vanilla extract, and salt until well combined.
  3. Gradually pour the warm milk mixture into the egg mixture, whisking constantly to avoid cooking the eggs.
  4. Strain the custard through a fine-mesh sieve into a clean bowl to remove any lumps.
