Featured Recipe: Cauliflower Leaf Fritters
Ingredients:
- 1 cup cauliflower leaves (washed and chopped)
- ½ cup chickpea flour (or all-purpose flour)
- 1 small onion, finely diced
- 1 garlic clove, minced
- 1 teaspoon cumin powder
- ½ teaspoon turmeric
- 1 egg (optional for binding)
- Salt and pepper to taste
- Olive oil for frying
Instructions:
- Prepare the Batter: In a mixing bowl, combine the chickpea flour, cumin, turmeric, salt, and pepper. Add water gradually to create a thick, pancake-like batter. If using an egg, whisk it in for extra binding.
- Add the Vegetables: Mix the chopped cauliflower leaves, onion, and garlic into the batter. Ensure everything is evenly coated.
- Heat the Pan: Heat olive oil in a non-stick skillet over medium heat.
- Fry the Fritters: Drop spoonfuls of the batter onto the skillet, flattening slightly with the back of the spoon. Cook for 2-3 minutes on each side until golden brown.
- Serve: Serve hot with a dollop of yogurt or a squeeze of lemon. These fritters are perfect as a snack, appetizer, or side dish.
Bonus Tip: Store Leftover Leaves
If you’re not ready to use your cauliflower leaves immediately, store them in a sealed bag in the refrigerator. They’ll stay fresh for up to a week.
