Ingredients

For the Cake:

  • 1 ¾ cups (220g) all-purpose flour
  • ¾ cup (75g) unsweetened cocoa powder
  • 2 cups (400g) granulated sugar
  • 1 ½ teaspoons baking powder
  • 1 ½ teaspoons baking soda
  • 1 teaspoon salt
  • 2 large eggs
  • 1 cup (240ml) whole milk
  • ½ cup (120ml) vegetable oil
  • 2 teaspoons vanilla extract
  • 1 cup (240ml) boiling water

For the Chocolate Fudge Frosting:

  • 1 cup (230g) unsalted butter, softened
  • ½ cup (50g) unsweetened cocoa powder
  • 4 cups (480g) powdered sugar
  • ½ cup (120ml) heavy cream or milk
  • 2 teaspoons vanilla extract
  • A pinch of salt

Instructions

Step 1: Prepare the Cake Batter

  1. Preheat your oven to 350°F (175°C). Grease and line two 8-inch (20cm) round cake pans with parchment paper.
  2. In a large bowl, whisk together the flour, cocoa powder, sugar, baking powder, baking soda, and salt.
  3. Add the eggs, milk, oil, and vanilla extract. Mix until combined.
  4. Gradually pour in the boiling water, whisking until the batter is smooth. (The batter will be thin – this is normal!)

Step 2: Bake the Cake

  1. Divide the batter evenly between the prepared cake pans.
  2. Bake for 30-35 minutes, or until a toothpick inserted in the center comes out clean.
  3. Let the cakes cool in the pans for 10 minutes, then transfer them to a wire rack to cool completely.
