Upside-Down Roasted Chicken Over Flavored Rice 🍗🍚

  • 🐔 1 whole chicken (about 4-5 lbs)
  • 🍚 2 cups long-grain rice (basmati or jasmine)
  • 🥣 4 cups chicken broth or water
  • 🧄 4 cloves garlic, minced
  • 🧅 1 large onion, finely chopped
  • 🫒 2 tbsp olive oil
  • 🌿 1 tsp ground cinnamon
  • 🌶️ 1 tsp paprika
  • ✨ 1 tsp turmeric (optional, for color)
  • 🧈 1 tbsp butter
  • 🧂 Salt and pepper to taste
  • 🌱 Fresh herbs (rosemary, thyme, or parsley)
  • 🍋 Lemon slices for garnish (optional)
For the Chicken Marinade: 🧄🍋
  • 🫒 3 tbsp olive oil
  • 🍋 Juice of 1 lemon
  • 🧄 4 cloves garlic, minced
  • 🌶️ 1 tsp smoked paprika
  • 🌿 1 tsp ground cumin
  • 🌿 1 tsp dried oregano
  • 🧂 Salt and pepper to taste
