🍋 Cheesecake Factory–Style Key Lime Cheesecake Recipe

This cheesecake is ultra-creamy, tangy, refreshing, and perfectly balanced — just like the famous restaurant version. It has a buttery graham cracker crust and a smooth lime filling that melts in your mouth.

🧾 Ingredients

🟤 For the Graham Cracker Crust

  • 2 cups graham cracker crumbs
  • ½ cup unsalted butter, melted
  • 2 tablespoons sugar

🧀 For the Key Lime Cheesecake Filling

  • 24 oz (3 packages) cream cheese, softened
  • 1 cup granulated sugar
  • 3 large eggs (room temperature)
  • ¾ cup key lime juice (fresh or bottled)
  • 1 tablespoon lime zest
  • 1 teaspoon vanilla extract
  • ½ cup sour cream or heavy cream

🍋 For Topping (optional)

  • Fresh lime slices
  • Extra lime zest
  • Whipped cream

Step 1: Prepare the Crust

  1. Preheat oven to 325°F (160°C).
  2. Mix graham cracker crumbs, melted butter, and sugar.
  3. Press firmly into the bottom and slightly up the sides of a 9-inch springform pan.
  4. Bake for 10 minutes, then set aside to cool.
